9th wedding Anniversary

Brad and my 9th wedding anniversary is coming up and it reminded me of the cookies I made shortly after our wedding. We had a small wedding with just close friends and family since that was all we could afford so we planned just a dessert bar with hot cocoa. We had some leftover hot cocoa toppings which were cinnamon chips, butterscotch chips and white chocolate chips. I didn’t know what to do with the leftovers and thought “hey, let’s just dump it in a chocolate chip cookie recipe” and see how that comes out… what is there to lose right? Well, they weren’t half bad! I took a basic highly rated chocolate chip cookie recipe off of AllRecipes.com and added my own chip ratio. These cookies are one of my husband’s faves til this day and I hope our kids will enjoy it someday =)

Gina’s Anniversary Cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
1/3 cup cinnamon chips
1/3 cup butterscotch chips
1/3 cup white chocolate chips
1 cup chopped walnuts

Preheat oven to 350 degrees F (175 degrees C).
Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Add baking soda to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

Sourdough Pancakes

I don’t know why no one told me about sourdough pancakes?? After starting my sourdough adventure, I realized I was wasting a lot of the discard. I found a few recipes online and decided to try it. OH EM GEE. They are SO good. They definitely have a unique flavor, partially due to the 50% whole wheat from the starter itself. It doesn’t require extra flour just the fed starter! I made it for Brad and he loved it as well! It was really easy to make and it will now be a regular thing on the menu.

The recipe I used is from Farmhouse on Boone.

Hello!

It’s been a long while since I’ve used this site. Now is the perfect time to update it and just keep people posted about our lives. I decided to get away from the toxic world of social media and would just like to focus on my family.

As some of you know, we have moved into a new neighborhood and we love it!! They are finishing up the last few lots on our cul de sac and couldn’t be more pleased to not hear all the construction anymore! Other than that it is typically peaceful here and we all love waking up in this house. We have never felt more blessed in our entire lives and are extremely grateful for everything we have.

My brother recently came to visit (he was here for a wedding of a very close friend) and he brought his lady friend with him. It was such a pleasure to meet her and to have my brother hang out. We ate a lot of good food! I also got to meet his close friend and his new bride. It was definitely a nice change of pace and being able to meet new people. In case you didn’t know, we are quite the introverts so that says a lot.
